Cajun Potato Soup

4 medium-sized russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 celery stalks, diced

4 cups chicken or vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

6 strips of bacon, cooked and crumbled (optional for garnish)

1 cup green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Base: In a large pot over medium heat, add a splash of oil (or a bit of bacon grease for extra flavor). Sauté the chopped onion, garlic, bell pepper, and celery for about 5-7 minutes until the vegetables are tender.

    Add the Potatoes: Stir in the diced potatoes, Cajun seasoning, smoked paprika, and cayenne pepper. Cook for an additional 2-3 minutes, allowing the spices to toast slightly.

      Crank up the Heat: Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low and cover the pot, allowing the soup to simmer for about 20-25 minutes, until the potatoes are fork-tender.

        Blend for Creaminess: Using an immersion blender, carefully blend half of the soup until it's smooth, leaving the rest chunky for texture. If you don't have an immersion blender, transfer half of the soup to a blender, blend until smooth, and then return it to the pot.

          Finish It Off: Stir in the heavy cream, and season with salt and black pepper to taste. Let the soup simmer for another 5 minutes to warm through.

            Serve and Garnish: Ladle the soup into bowls and garnish with crumbled bacon (if using), chopped green onions, and a sprinkle of fresh parsley.
