Cajun Garlic Butter Steak Bites

1 lb (450g) sirloin steak, cut into 1-inch cubes

3 tablespoons Cajun seasoning

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Juice of 1 lemon

Optional: 1 tablespoon olive oil for searing

Prepare the Steak: In a medium bowl, toss the cubed sirloin steak with Cajun seasoning until evenly coated. Allow the steak to rest for about 10-15 minutes for the flavors to permeate.

    Heat the Pan: In a large skillet, melt 2 tablespoons of butter over medium-high heat. If desired, add 1 tablespoon of olive oil for additional richness and to prevent sticking.

      Cook the Steak Bites: Once the butter is sizzling, add the seasoned steak bites to the skillet in a single layer. Avoid overcrowding the pan; cook in batches if necessary. Sear for about 2–3 minutes on each side until browned and cooked to your desired doneness. For rare, aim for an internal temperature of 125°F (52°C); for medium, reach 145°F (63°C).

        Add Garlic and Butter: Reduce the heat to medium-low. Add the remaining 2 tablespoons of butter and minced garlic to the skillet. Stir continuously, allowing the garlic to intoxicate the butter without burning for about 1–2 minutes.

          Finishing Touches: Squeeze in the fresh lemon juice, and season with salt and pepper to taste. Toss everything together gently to coat the steak bites in the fragrant garlic butter.

            Garnish: Remove from heat, sprinkle chopped fresh parsley over the top, and toss once more for even distribution.
