Ingredients

2 pounds chicken wings

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper, freshly cracked

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup grated Pecorino Romano cheese

1/2 cup unsalted butter, melted

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Prepare the Chicken Wings: In a large bowl, combine the chicken wings, olive oil, salt, black pepper, garlic powder, and onion powder. Toss the wings until they’re well coated in the seasoning mixture.

Bake the Wings: Spread the wings in a single layer on the prepared baking sheet. Bake in the preheated oven for about 40-45 minutes, flipping halfway through, until the wings are golden brown and crispy.

Prepare the Cacio e Pepe Sauce: In a small saucepan, melt the butter over low heat. Once melted, add the grated Pecorino Romano cheese and a generous amount of freshly cracked black pepper. Stir constantly until the cheese is fully melted and the sauce is smooth. Remove from heat.

Coat the Chicken Wings: Once the wings are done baking, transfer them to a large bowl. Pour the Cacio e Pepe sauce over the wings and toss until they are evenly coated.

Garnish and Serve: Transfer the coated wings to a serving platter. Garnish with chopped parsley and additional grated Pecorino Romano if desired. Serve with lemon wedges on the side for a refreshing squeeze of citrus.

Enjoy your flavorful Cacio e Pepe Chicken Wings!
