1 pound smoked sausage, sliced

1 small onion, diced

2 cloves garlic, minced

4 cups green cabbage, shredded

2 medium carrots, diced

2 ribs celery, diced

4 cups low-sodium chicken broth

1 can (15 oz) diced tomatoes, with juices

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes, stirring occasionally.

    Add the diced onion and cook for another 3-4 minutes until it becomes translucent.

      Stir in the minced garlic and sauté for about 1 minute until fragrant.

        Add the diced carrots and celery to the pot, cooking until slightly softened, about 5 minutes.

          Toss in the shredded cabbage and stir well until it starts to wilt, about 3-4 minutes.

            Pour in the chicken broth and diced tomatoes with their juices. Stir in the Italian seasoning, smoked paprika, salt, and pepper.

              Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, until the vegetables are tender and the flavors meld together.

                Taste and adjust seasoning if necessary.

                  Serve hot in bowls, garnished with fresh chopped parsley.
