2 cups butternut squash, peeled and grated

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon fresh sage, finely chopped (or 1/2 tsp dried sage)

1/4 cup all-purpose flour (or gluten-free flour)

1 large egg, lightly beaten

1/4 cup grated Parmesan cheese (optional)

1/4 teaspoon red pepper flakes (optional, for heat)

1/4 cup breadcrumbs (for a crunchy texture)

2 tablespoons olive oil (for frying)

Fresh sage leaves, for garnish

Preheat the Oven: Preheat your oven to 200°F (90°C) to keep the fritters warm as you cook them in batches.

    Prepare the Squash: In a large mixing bowl, combine the grated butternut squash with salt. Let it sit for about 10 minutes. This will draw out excess moisture from the squash. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.

      Mix Ingredients: In the bowl with the drained squash, add black pepper, garlic powder, onion powder, chopped sage, flour, beaten egg, Parmesan cheese (if using), and red pepper flakes. Stir until just combined to form a mixture that holds together.

        Form Fritters: Using your hands, shape the mixture into patties about 2.5 inches in diameter and 1/2 inch thick. Coat each side lightly with breadcrumbs to add texture.

          Heat the Oil: In a large skillet, heat the olive oil over medium heat. It should shimmer when ready.
