Ingredients

1 medium head of cauliflower, cut into florets

½ cup all-purpose flour (or almond flour for a gluten-free option)

½ cup water

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

½ cup buffalo sauce (store-bought or homemade)

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 cup chopped tomatoes

½ cup shredded carrots

½ cup creamy ranch or blue cheese dressing

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the oven: Begin by preheating your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the batter: In a large mixing bowl, combine the flour, water, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until you achieve a smooth batter.

Coat the cauliflower: Dip the cauliflower florets into the batter, ensuring they are well-coated. Shake off any excess batter and place them on the prepared baking sheet.

Bake: Bake the batter-coated cauliflower in the preheated oven for 20-25 minutes, or until they are golden and crispy, flipping halfway through for even cooking.

Toss with buffalo sauce: Once the cauliflower is baked, remove it from the oven and transfer the florets to a bowl. Pour the buffalo sauce over the cauliflower and toss until they are fully coated.

Warm the tortillas: If desired, warm the tortillas on a skillet over medium heat for about 30 seconds on each side. This will make them more pliable.

Assemble the wraps: On each tortilla, layer a handful of shredded lettuce, a scoop of the buffalo cauliflower, chopped tomatoes, and shredded carrots. Drizzle with ranch or blue cheese dressing.

Wrap it up: Carefully fold the sides of the tortilla inward, then roll it tightly from the bottom to create a secure wrap. Repeat for all tortillas.

Slice and serve: Cut the wraps in half for easier handling and serve them immediately, garnished with fresh cilantro or parsley if desired. Enjoy your delicious Buffalo Cauliflower Wraps!
