Ingredients

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 tablespoon vanilla extract

2 cups rolled oats

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup chocolate chips (optional)

1/2 cup chopped nuts (pecans or walnuts, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.

Add the Egg and Vanilla: Beat in the egg and vanilla extract until well combined. Make sure to scrape down the sides of the bowl to incorporate all ingredients.

Mix the Dry Ingredients: In a separate bowl, mix the rolled oats, flour, baking soda, cinnamon, and salt. Stir until well blended.

Combine Dry and Wet Ingredients: Gradually add the dry mixture to the wet mixture, stirring just until combined. Avoid overmixing as this can make the cookies tough.

Fold in Add-ins: If you're using chocolate chips or nuts, gently fold them into the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving a couple of inches between each cookie as they will spread while baking.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers still appear soft. The cookies will continue to cook on the baking sheet after being removed from the oven.

Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, indulge in your extra chewy Brown Sugar Cinnamon Oatmeal Cookies with a glass of milk or your favorite beverage!
