Ingredients

2 cups fresh broccoli florets, chopped

1 cup sharp cheddar cheese, shredded

6 large eggs

1/4 cup milk (or any non-dairy milk for a vegan option)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt (adjust to taste)

1/4 cup green onions, chopped (optional)

Cooking spray or oil for greasing

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Muffin Pan: Grease a 12-cup muffin tin with cooking spray or a light coat of oil to prevent sticking.

Blanch Broccoli: In a pot of boiling water, blanch the chopped broccoli for 1-2 minutes until vibrant green. Drain and cool under cold water to stop the cooking process. Chop any large pieces further if necessary.

Mix Egg Base: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, black pepper, and salt until well combined.

Add Cheese and Broccoli: Fold in the shredded cheddar cheese, blanched broccoli, and green onions (if using) into the egg mixture. Make sure all ingredients are evenly distributed.

Fill Muffin Cups: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the muffins are set in the center and lightly golden on top.

Cool and Serve: Let the muffins cool in the tin for about 5 minutes before gently loosening them with a knife and transferring to a wire rack to cool completely. Serve them warm or store them in an airtight container in the refrigerator.
