1 lb baby bok choy, halved lengthwise

8 oz shiitake mushrooms, sliced

1 red bell pepper, julienned

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons vegetable oil (like canola or grapeseed)

2 tablespoons soy sauce (use low sodium if preferred)

1 tablespoon oyster sauce (optional for added depth)

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar (brown sugar preferred)

Salt and pepper, to taste

2 tablespoons sesame seeds, toasted (for garnish)

Green onions, sliced (for garnish)

Instructions
 

Prep the Vegetables: Start by washing and drying the bok choy thoroughly. Cut the smaller baby bok choy in half and leave the larger ones in quarters. Slice the shiitake mushrooms and julienne the red bell pepper. Have the garlic and ginger ready by mincing and grating them respectively.

    Sauté the Aromatics: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant but not browned.

      Add Mushrooms and Peppers: Add the sliced shiitake mushrooms and red bell pepper to the skillet. Stir-fry for about 3-4 minutes, letting the mushrooms soften and the peppers slightly char.

        Incorporate Bok Choy: Add the halved bok choy to the skillet and stir gently, ensuring the vegetables are mixed well. Cook for another 2-3 minutes, allowing the bok choy to wilt down.
