Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon

¼ cup unsalted butter, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¾ cup buttermilk (or plain yogurt)

1 ½ cups fresh blueberries (or frozen, thawed and drained)

Zest of 1 lemon (optional, for a zesty twist)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easier removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 3-4 minutes.

Incorporate Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.

Alternate with Buttermilk: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture (flour, buttermilk, flour) until just combined. Be careful not to overmix.

Fold in Blueberries: Gently fold in the fresh blueberries and lemon zest (if using) until evenly distributed throughout the batter.

Pour Batter: Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for about 55–65 minutes or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it with aluminum foil midway through baking.

Cool: Once done, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Serve: Slice and serve your delightful Blueberry Bliss Quick Bread warm or at room temperature. Enjoy as is or with a pat of butter for extra indulgence!
