Blueberry Crumble Bars

For the filling:

2 cups fresh blueberries (or frozen, thawed)

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the crumble crust and topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup packed brown sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

To garnish:

A pinch of sea salt (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the filling: In a medium mixing bowl, combine the blueberries, granulated sugar, lemon juice, cornstarch, and vanilla extract. Gently stir until the blueberries are well-coated. Set aside.

      Make the crumble mixture: In a large bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, and salt until well combined. Pour in the melted butter and mix with a fork or your hands until everything is crumbly and resembles coarse crumbs.

        Assemble the bars: Press about 2/3 of the crumble mixture into the bottom of the prepared baking dish to form a firm base. Spread the blueberry filling evenly over the crust. Sprinkle the remaining crumble on top.

          Bake: Place in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the filling is bubbling.

            Cool and serve: Remove from the oven and allow to cool in the pan for about 15 minutes. Using the parchment overhang, lift the bars out onto a cutting board. Allow to cool completely before slicing into bars.

              Garnish if desired: Lightly sprinkle with sea salt and dust with powdered sugar before serving for an elegant touch.
