Blueberry Cream Cheese Bites

1 package (8 oz) cream cheese, softened

1/2 cup powdered sugar

1/2 tsp vanilla extract

1 cup fresh blueberries (plus extra for garnish)

1 pre-made puff pastry sheet (thawed)

1 egg (for egg wash)

1 tbsp milk (for egg wash)

A pinch of cinnamon (optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Make Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. If desired, add a pinch of cinnamon for an extra flavor kick.

      Add Blueberries: Gently fold in the fresh blueberries into the cream cheese mixture. Be careful not to crush the berries too much — you want to keep them whole for a nice burst of flavor in each bite.

        Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface. Cut the sheet into squares, approximately 3x3 inches each (you should get about 12 squares depending on the puff pastry size).

          Fill Pastry Squares: Place 1 tablespoon of the cream cheese and blueberry mixture in the center of each pastry square. Be careful not to overfill.

            Seal the Bites: Fold the corners of the pastry squares to the center to create little pockets. Press the edges together to seal tightly, using a fork to crimp and ensure they stay closed.

              Prepare Egg Wash: In a small bowl, whisk together the egg and milk. Brush the tops of the pastry bites with the egg wash to give them a beautiful golden color when baked.
