Oats are a powerhouse of nutrition, celebrated for their high fiber content and numerous health benefits. One of the key components of rolled oats is beta-glucan, a type of soluble fiber that has been linked to lower cholesterol levels and improved heart health. Incorporating oats into your diet can help regulate blood sugar levels, making them an excellent choice for those managing diabetes or seeking weight loss. Additionally, the fiber in oats promotes satiety, which can aid in controlling appetite and reducing cravings throughout the day.

Ingredients

2 cups rolled oats

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 cups almond milk (or any milk of choice)

1/4 cup maple syrup or honey

1 large egg (or flax egg for a vegan option)

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

1/2 cup sliced almonds

1/4 cup almond butter (optional, for drizzling)

Additional almond slices and blueberries for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to ensure everything is evenly mixed.

Prepare Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup (or honey), egg (or flax egg), and vanilla extract until smooth.

Combine Mixtures: Gradually pour the wet ingredients into the dry oat mixture, stirring until fully combined. Gently fold in the blueberries and half of the sliced almonds, ensuring they are evenly distributed throughout.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining sliced almonds on top for an added crunch.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden and the oatmeal is set. A toothpick inserted in the center should come out clean.

Cool and Serve: Let the baked oatmeal cool for about 10 minutes before slicing into squares. Drizzle with almond butter, if desired, and top with extra blueberries and almond slices.

Enjoy: Serve warm as a delightful breakfast or snack! Leftovers can be stored in the fridge and reheated for future enjoyment.
