For the Cookies:

1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 tsp pure vanilla extract

½ tsp culinary lavender, finely crushed

For the Blackberry Lavender Ice Cream:

2 cups heavy cream

1 cup whole milk

¾ cup granulated sugar

1 tsp pure vanilla extract

½ cup blackberries (fresh or thawed if frozen)

1 tsp culinary lavender, dried

Pinch of salt

For Assembly:

Additional blackberries and lavender for garnish (optional)

Instructions
 

Make the Cookies:

    - In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

      - In a large mixing bowl, cream together the softened butter and sugar until light and fluffy using a hand mixer or stand mixer (about 3-4 minutes).

        - Add the egg, vanilla extract, and crushed culinary lavender. Mix until well combined.

          - Gradually add the dry ingredients to the butter mixture, mixing on low speed until just incorporated.

            - Chill the dough in the refrigerator for at least 30 minutes.

              Bake the Cookies:

                - Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

                  - Once chilled, scoop tablespoons of dough onto the prepared baking sheets, spacing 2 inches apart.

                    - Bake for 10-12 minutes or until the cookies are lightly golden around the edges. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                      Prepare the Ice Cream:

                        - In a medium saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves.

                          - Add the blackberries, culinary lavender, and a pinch of salt. Allow the mixture to come to a gentle simmer for about 5-7 minutes, mashing the blackberries to release their juices and flavor.

                            - Remove from heat and steep for 15 minutes, then strain through a fine mesh sieve into a clean bowl to remove solids.

                              - Add vanilla extract, then chill the mixture in the fridge for at least 2 hours or until very cold.

                                - Churn in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to an airtight container and freeze until firm, about 4 hours.

                                  Assemble the Ice Cream Sandwiches:

                                    - Once both the cookies and ice cream are ready, scoop a generous amount of blackberry lavender ice cream onto the flat side of a cookie.

                                      - Top with another cookie and gently press together to form a sandwich. Repeat the process until all cookies have been used.
