2 lbs pork tenderloin

1 cup fresh blackberries (plus extra for garnish)

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh thyme sprigs for garnish

Marinate the Pork: In a large bowl, combine balsamic vinegar, honey, soy sauce, Dijon mustard, minced garlic, salt, and pepper. Mix well. Add the pork tenderloin to the bowl, ensuring it is fully coated. Cover and marinate in the refrigerator for at least 1 hour (or overnight for best flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Prepare the Blackberry Glaze: In a small saucepan over medium heat, combine 1 cup of fresh blackberries, balsamic vinegar, honey, and 1 tablespoon of olive oil. Cook for about 5-7 minutes, smashing the blackberries gently with a wooden spoon to release their juices. Once the mixture thickens slightly, remove from heat and strain the sauce through a fine-mesh sieve to remove seeds. Return to the saucepan to keep warm.

        Sear the Pork: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear the tenderloin for about 2-3 minutes on each side until browned.
