Ingredients

3 ripe bananas, mashed

1/3 cup melted butter

1/2 cup brown sugar

1/2 cup granulated sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 1/2 cups all-purpose flour

1/2 cup Biscoff spread

Optional: 1/2 cup chopped walnuts or pecans

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted butter. Mix until well combined. Stir in the brown sugar and granulated sugar until smooth. Add the beaten egg and vanilla extract, mixing until incorporated.

Add Dry Ingredients: Sprinkle the baking soda and salt over the banana mixture, then gently fold in the flour until just combined. Be careful not to overmix; it’s okay if there are a few lumps. If you choose to add nuts, fold them in gently.

Prepare Biscoff Swirl: In a small microwave-safe bowl, slightly warm the Biscoff spread in the microwave for about 15-20 seconds to make it easier to swirl.

Layer and Swirl: Pour half of the banana bread batter into the prepared loaf pan. Then, add about half of the warmed Biscoff spread in spoonfuls on top of the batter. Use a knife or a skewer to gently swirl the Biscoff into the batter. Repeat the process with the remaining banana bread batter and the rest of the Biscoff spread, swirling again.

Bake: Place the loaf pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the bread; if the top is browning too quickly, cover it loosely with aluminum foil.

Cool: Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.

Serve and Enjoy: Slice the Biscoff Swirl Banana Bread and enjoy it warm or at room temperature. You can serve it plain or with an extra drizzle of Biscoff spread on top!
