Ingredients
  

1 pound ground beef (or turkey)

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

8 corn tortillas, cut into strips

2 cups shredded cheddar cheese

1 cup sour cream

1 cup salsa

1/2 cup sliced olives (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet, over medium heat, add the ground beef. Cook until browned, about 5-7 minutes.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

        Mix Filling Ingredients: Stir in the black beans, corn, diced tomatoes, and taco seasoning. Mix well and cook for an additional 5 minutes to let the flavors meld.

          Layer the Casserole: In a greased 9x13 inch baking dish, start by layering half of the tortilla strips on the bottom. Pour half of the meat mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat this layering process with the remaining tortilla strips, meat mixture, and top with the remaining cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is golden and bubbling.

              Prepare the Topping: While the casserole is baking, mix the sour cream with salsa in a small bowl.

                Serve: Once the casserole is done baking, let it cool for a few minutes. Serve it warm, topped with the sour cream salsa mixture, and garnish with sliced olives and fresh cilantro if desired.
