4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon dried thyme

½ teaspoon black pepper

Salt, to taste

2 tablespoons olive oil

1 cup heavy cream

1 cup shredded sharp cheddar cheese

Fresh parsley, chopped (for garnish)

Prepare the Rice: Rinse the rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice.

    Sauté the Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and red bell pepper. Sauté for about 5-7 minutes until they become soft and translucent. Add the garlic and cook for an additional minute until fragrant.

      Cook the Chicken: Push the vegetables to the side of the skillet, and add the remaining tablespoon of olive oil. Season the chicken thighs with salt, pepper, smoked paprika, and thyme, then place them in the skillet. Sear the chicken for about 5 minutes on each side until they're nicely browned.

        Add the Liquid: Pour in the chicken broth and bring the mixture to a gentle simmer. Then stir in the rinsed rice, ensuring it’s evenly distributed. Nestle the chicken pieces on top of the rice mixture.

          Simmer: Cover the skillet with a tight-fitting lid, reduce the heat to low, and let everything simmer. Cook for about 20-25 minutes until the rice is tender, and the chicken is cooked through (internal temperature should be 165°F or 75°C).

            Make it Creamy: Once the rice is cooked, carefully remove the chicken and set it aside. Stir in the heavy cream and half of the shredded cheese into the rice mixture. Mix well until the cheese has melted and the sauce is creamy.

              Combine: Return the chicken to the skillet with the cheesy rice mixture. Top with the remaining shredded cheese, cover, and let it cook for an additional 5 minutes on low heat until the cheese melts.

                Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve hot directly from the skillet for a cozy, comforting dinner.
