4 bone-in, skin-on chicken thighs

1 cup long-grain white rice

2 cups chicken broth (low-sodium)

1 medium onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon olive oil

1 tablespoon butter

1 cup heavy cream or half-and-half

Fresh parsley, for garnish

Instructions
 

Sear the Chicken: In a large skillet or Dutch oven, heat the olive oil and butter over medium-high heat. Season the chicken thighs with salt, pepper, and smoked paprika. Sear the chicken thighs skin-side down for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Transfer the chicken to a plate and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion, red bell pepper, and garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Prepare Rice: Stir in the rice, dried thyme, and a pinch of salt, mixing well to coat the rice with the vegetable mixture. Pour in the chicken broth and bring it to a gentle boil.

        Add Chicken Back In: Return the seared chicken thighs to the skillet, placing them on top of the rice. Cover with a lid or aluminum foil, reduce the heat to low, and simmer for about 25 minutes, or until the rice is tender and has absorbed most of the liquid.

          Create the Sauce: Once the rice is cooked, carefully remove the chicken thighs and set them aside. Stir in the heavy cream or half-and-half into the rice, mixing until well combined.

            Combine & Simmer: Place the chicken back on top of the creamy rice mixture, cover again, and let it simmer for an additional 5-10 minutes to heat through and meld the flavors.

              Garnish and Serve: Remove from heat. Garnish with freshly chopped parsley before serving. Enjoy this comforting dish warm!
