Ingredients

2 medium zucchinis

½ cup all-purpose flour

2 large eggs

1 cup breadcrumbs (Panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Olive oil spray or cooking oil for frying

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini in half lengthwise, then slice each half into long, thin strips (like fries).

Set Up Breading Station: In three separate bowls, place the flour, whisked eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        Coat the Zucchini Fries:

          - Dredge each zucchini strip in the flour, shaking off the excess.

            - Dip it into the beaten eggs, ensuring full coverage.

              - Finally, roll the zucchini in the breadcrumb mixture until well-coated.

Arrange on Baking Sheet: Place the coated zucchini fries on the prepared baking sheet in a single layer. For extra crispiness, spray them lightly with olive oil.

Bake: Bake in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

Serve: Remove from the oven and let them cool for a couple of minutes. Serve hot with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
