1 tsp baking powder

1 tsp baking soda

4 large eggs

3 cups grated carrots (about 5-6 medium carrots)

1 cup crushed pineapple, drained

1 cup chopped walnuts or pecans (optional)

1 tsp vanilla extract

Cream cheese frosting (for topping; recipe below if desired)

Cream Cheese Frosting Ingredients:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

2 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until fully combined.

      Mix Wet Ingredients: In another mixing bowl, whisk together the vegetable oil, applesauce, eggs, and vanilla extract until smooth.

        Combine Mixtures: Gradually add the wet mixture to the dry mixture, stirring until just combined. Be careful not to overmix.

          Add Carrots and Pineapple: Fold in the grated carrots, crushed pineapple, and nuts (if using) until evenly distributed throughout the batter.
