1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 medium carrot, thinly sliced

4 green onions, chopped

3 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon sesame oil

Cooked jasmine or basmati rice (for serving)

Sesame seeds (for garnish)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef, soy sauce, oyster sauce, and cornstarch. Toss until the beef is evenly coated and let it marinate for about 10 minutes while you prep the vegetables.

    Prep the Vegetables: While the beef marinates, wash and slice the bell peppers, broccoli, and carrot. Chop the green onions and mince the garlic and ginger. Set everything aside.

      Heat the Wok: In a large wok or skillet, heat 1 tablespoon of vegetable oil over high heat. Once shimmering, add the marinated beef in a single layer and sear for about 2-3 minutes, stirring occasionally until browned but not fully cooked. Remove the beef from the pan and set aside.

        Stir-Fry the Vegetables: With the remaining tablespoon of oil, add the minced garlic and grated ginger to the hot wok. Sauté for about 30 seconds until fragrant. Then add the sliced bell peppers, broccoli, and carrots. Stir-fry for 4-5 minutes until the vegetables are crisp-tender.

          Combine and Finish: Return the partially cooked beef to the pan. Drizzle with sesame oil and toss everything together, cooking for an additional 2-3 minutes until the beef is fully cooked and the veggies are vibrant. If desired, adjust seasoning with more soy sauce or pepper.

            Serve: Remove from heat, garnish with chopped green onions and sesame seeds. Serve hot over fluffy jasmine or basmati rice.
