Ingredients
  

1 pound ground beef

1 cup shredded cheese (cheddar or Mexican blend)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup refried beans

1 tablespoon taco seasoning

1 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas

2 tablespoons vegetable oil (for cooking)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.

    Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.

      Stir in the taco seasoning, cumin, salt, and pepper. Mix well and let it cook for an additional 2-3 minutes.

        Remove from heat and add the refried beans to the beef mixture, stirring until combined. Then fold in the shredded cheese.

          Lay a tortilla on a flat surface and spoon approximately 1/4 of the beef and cheese mixture into the center, leaving space around the edges.

            Fold in the sides of the tortilla and roll it up tightly from the bottom to the top, ensuring the filling is well-enclosed. Repeat with remaining tortillas and filling.

              In a large skillet, heat the vegetable oil over medium-high heat. Carefully add the chimichangas seam side down and fry until golden brown and crispy, about 4-5 minutes per side. You may need to do this in batches.

                Once golden, remove the chimichangas and drain on paper towels to remove excess oil.

                  Serve hot, garnished with chopped cilantro, and accompanied by sour cream and salsa for dipping.
