Before diving into the preparation of your BBQ Chicken Zucchini Boats, it is crucial to preheat your oven. Setting your oven to the correct temperature—typically around 375°F (190°C)—ensures that your zucchini boats cook evenly. Proper preheating allows the cheese to melt just right, creating that glorious bubbly topping while ensuring the zucchini retains its tenderness without becoming mushy. Taking this step seriously not only affects cooking time but also the overall texture of your dish.

Ingredients

4 medium zucchinis

1 cup cooked shredded chicken (rotisserie works great)

1 cup BBQ sauce (your choice)

1 cup shredded cheese (cheddar or mozzarella)

1/2 cup red onion, finely diced

1/2 cup corn kernels (fresh, frozen, or canned)

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Zucchinis: Slice the zucchinis in half lengthwise. Using a spoon, scoop out the center to create a hollow boat, leaving about 1/4 inch of the zucchini intact. This helps hold your filling.

Mix Filling: In a large bowl, combine the shredded chicken, BBQ sauce, diced red onion, corn kernels, garlic powder, smoked paprika, salt, and pepper. Mix until everything is well combined.

Fill Zucchini Boats: Evenly distribute the BBQ chicken mixture into each prepared zucchini boat, packing it tightly.

Add Cheese: Sprinkle the shredded cheese generously on top of each filled zucchini boat.

Bake: Place the zucchini boats on a baking sheet lined with parchment paper or in a baking dish. Bake in the preheated oven for about 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired, then serve warm.
