BBQ Chicken Flatbread Pizza

1 large flatbread or naan

1 cup cooked chicken, shredded (preferably rotisserie)

1/2 cup BBQ sauce (plus extra for drizzling)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup bell pepper, thinly sliced (red or yellow for color)

1/2 cup corn kernels (fresh, canned, or frozen)

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Olive oil (for brushing)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C). If using a pizza stone, place it in the oven to heat up, or line a baking sheet with parchment paper.

    Prepare the Chicken: In a mixing bowl, combine the shredded chicken with 1/2 cup of BBQ sauce, smoked paprika, garlic powder, and season with salt and pepper. Mix well to ensure the chicken is evenly coated.

      Shape the Flatbread: If necessary, roll out your flatbread or naan to fit your baking sheet or pizza stone. Brush one side lightly with olive oil for a crispier crust.

        Assemble the Pizza: Place the flatbread on the prepared baking sheet or pizza stone. Spread the remaining BBQ sauce evenly over the surface of the flatbread. Then, sprinkle half of the shredded mozzarella cheese across the sauce.

          Add Toppings: Evenly distribute the BBQ chicken mixture over the cheese. Top with sliced red onions, bell peppers, and corn. Finish by adding the remaining mozzarella cheese on top.

            Bake the Pizza: Transfer the assembled flatbread pizza to the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
