Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup cornstarch

1/2 cup all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste for spiciness)

1 tablespoon lime juice

Fresh cilantro or green onions, chopped (for garnish)

Oil for frying (vegetable or canola)

Instructions
 

In a mixing bowl, combine cornstarch, flour, garlic powder, paprika, salt, and pepper. Mix well and set aside.

    Pat the salmon cubes dry with a paper towel. This helps the coating stick better.

      Heat oil in a deep frying pan or pot over medium-high heat until it reaches about 350°F (175°C).

        Dredge each salmon cube in the flour mixture, ensuring all sides are coated. Shake off any excess flour.

          Carefully place the coated salmon bites into the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 4-5 minutes. Turn occasionally for even cooking.

            Once cooked, remove the salmon bites using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

              In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice to create the Bang Bang sauce.

                Toss the crispy salmon bites in a portion of the Bang Bang sauce until evenly coated.

                  Serve the Bang Bang Salmon Bites warm, drizzled with additional sauce and garnished with chopped cilantro or green onions.
