Ingredients

4 salmon fillets (about 6 oz each)

Salt and black pepper, to taste

1 tablespoon olive oil

1 cup panko breadcrumbs

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Salmon: Season the salmon fillets with salt and black pepper on both sides. Place them on the lined baking sheet.

Make the Sauce: In a mixing bowl, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and onion powder. Mix well until smooth and set aside.

Coat the Salmon: Brush a generous layer of the sauce mixture over each salmon fillet, reserving some for later. Sprinkle the panko breadcrumbs evenly over the sauced salmon, pressing lightly to adhere.

Bake: Drizzle the olive oil over the breadcrumb-coated salmon. Bake in the preheated oven for about 15-18 minutes or until the salmon is cooked through and the breadcrumbs are golden brown and crispy.

Garnish: Remove the salmon from the oven, and drizzle the reserved sauce on top. Sprinkle with chopped green onions and sesame seeds for an added crunch and burst of flavor.

Serve: Serve your Bang Bang Salmon hot with a side of steamed rice or fresh salad, drizzling a little extra sauce over if desired. Enjoy!
