Ingredients

2 ripe bananas, sliced

1 tablespoon unsalted butter

1/4 cup brown sugar

1 teaspoon ground cinnamon

1 tablespoon rum (optional, for flambé)

1 teaspoon vanilla extract

2 cups almond milk (or milk of choice)

1/2 cup protein powder (vanilla or unflavored)

1/3 cup chia seeds

1/4 cup rolled oats

Pinch of salt

Chopped nuts for topping (walnuts or pecans)

Whipped cream or yogurt (for serving, optional)

Instructions

Caramelize the Bananas: In a medium skillet over medium heat, melt the butter. Add the sliced bananas, brown sugar, cinnamon, and a pinch of salt. Cook for about 3-4 minutes, gently stirring until the bananas are coated and the mixture thickens slightly. If using, at this point you can add the rum and flambé (light the alcohol to burn off the alcohol and add depth).

Blend the Pudding Base: In a mixing bowl or blender, combine the almond milk, protein powder, chia seeds, rolled oats, and vanilla extract. Blend or whisk well until combined and slightly thickened.

Combine Pudding and Bananas: Fold the caramelized banana mixture into the pudding base until fully integrated, ensuring the bananas are distributed evenly.

Set the Pudding: Pour the mixture into serving bowls or jars. Cover with plastic wrap and refrigerate for at least 2 hours, or until it sets.

Serve: Once set, give the pudding a good stir. Top with chopped nuts and a dollop of whipped cream or yogurt, if desired. Enjoy the unique combination of bananas foster flavors with a protein boost!
