2 ripe bananas, mashed

1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/2 cup Greek yogurt or applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/2 cup chocolate chips or nuts (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

    Mix the wet ingredients: In a large bowl, combine the mashed bananas, Greek yogurt (or applesauce), honey (or maple syrup), eggs, and vanilla extract. Whisk the mixture until well combined.

      Combine the dry ingredients: In another bowl, stir together the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon (if using).

        Combine wet and dry mixtures: Gradually pour the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix; it's okay if a few lumps remain.

          Add mix-ins: Gently fold in chocolate chips or nuts if desired. These will add more texture and flavor to your muffins.

            Fill the muffin tins: Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
