2 ripe bananas, mashed

1 cup rolled oats

1/2 cup mixed berries (fresh or frozen, e.g., blueberries, strawberries, raspberries)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts (e.g., walnuts, almonds) or seeds (e.g., chia, flax) for added crunch

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), almond butter, and vanilla extract. Stir until well mixed and smooth.

      Combine the Dry Ingredients: In a separate bowl, mix the rolled oats, cinnamon, and salt. If you're adding nuts or seeds, incorporate them into this mixture too.

        Combine Both Mixtures: Gradually fold the dry ingredients into the wet banana mixture, using a spatula to combine fully. Once combined, gently fold in the mixed berries, being careful not to over-mix, as you want to keep some of the berries intact.

          Shape the Bites: Using your hands or a small ice cream scoop, form small bite-sized balls (about 1-2 tablespoons each) and place them on the prepared baking sheet. Flatten them slightly for even baking.

            Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the bites are golden brown and firm to the touch.
