Balsamic Roasted Veggie Flatbread

1 large flatbread or pita bread

1 medium zucchini, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, sliced into thin wedges

1 cup cherry tomatoes, halved

2 tablespoons olive oil

3 tablespoons balsamic vinegar

2 teaspoons dried oregano

Salt and pepper to taste

1 cup fresh mozzarella cheese, torn into pieces

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil, balsamic vinegar, oregano, salt, and pepper. Toss to coat the veggies evenly.

      Roast the Vegetables: Spread the seasoned vegetables out in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes or until the veggies are tender and slightly caramelized, stirring halfway through for even cooking.

        Assemble the Flatbread: While the vegetables are roasting, prepare the flatbread. Once the veggies are done, remove them from the oven and lower the oven temperature to 375°F (190°C).

          Top the Flatbread: Place the flatbread on a baking sheet. Distribute the roasted vegetables evenly over the flatbread and sprinkle the torn fresh mozzarella cheese on top.

            Bake the Flatbread: Bake the flatbread in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Once the flatbread is done, remove it from the oven and let it cool for a minute. Garnish with fresh basil leaves before slicing.
