Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons balsamic vinegar

2 tablespoons olive oil

2 tablespoons maple syrup (or honey)

1 teaspoon Dijon mustard

2 cloves garlic, minced

Salt and freshly ground black pepper, to taste

1/4 cup grated Parmesan cheese (optional, for a savory touch)

Toasted pine nuts or walnuts, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will give the Brussels sprouts an irresistible caramelization.

Prepare the Brussels Sprouts: Rinse the Brussels sprouts under cold water and trim the ends. Cut them in half lengthwise to ensure even roasting.

Make the Sauce: In a large mixing bowl, whisk together the balsamic vinegar, olive oil, maple syrup, Dijon mustard, minced garlic, salt, and pepper until well combined.

Coat the Brussels Sprouts: Add the halved Brussels sprouts to the bowl with the sauce. Toss them until they are evenly coated with the mixture, ensuring all sides absorb the flavors.

Arrange for Roasting: Spread the Brussels sprouts out in a single layer on a large baking sheet, making sure they have space between them for optimal roasting.

Roast Them: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the Brussels sprouts are beautifully browned and tender. Toss them halfway through to ensure even cooking.

Add the Finishing Touches: Once roasted, remove them from the oven and, if desired, sprinkle the grated Parmesan cheese over the top while they are still hot. This will allow the cheese to melt slightly and create a delightful savory crust.

Garnish and Serve: Transfer the Brussels sprouts to a serving platter. For an added crunch, sprinkle toasted pine nuts or walnuts over the top. Serve immediately and enjoy your flavor bomb!
