1 lb flank steak, trimmed

1 cup balsamic vinegar

3 tbsp honey

3 cloves garlic, minced

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

1 tsp paprika

2 cups Brussels sprouts, halved

1 red bell pepper, sliced

1 medium zucchini, sliced

1 cup baby carrots

Fresh parsley, chopped (for garnish)

Instructions
 

Marinade the Steak: In a bowl, whisk together balsamic vinegar, honey, minced garlic, olive oil, salt, pepper, thyme, and paprika. Place the flank steak in a resealable plastic bag or a shallow dish and pour the marinade over the steak. Seal or cover and refrigerate for at least 30 minutes (or overnight for best flavor).

    Preheat Oven: Preheat your oven to 425°F (220°C).

      Prep the Veggies: While the steak marinates, prepare the vegetables. In a large bowl, combine Brussels sprouts, red bell pepper, zucchini, and baby carrots. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.

        Sheet Pan Assembly: Line a baking sheet with parchment paper or aluminum foil for easy cleanup. Arrange the marinated veggies on one half of the pan, making sure they are in a single layer.

          Sear the Steak: Remove the flank steak from the marinade (reserve the marinade) and heat a skillet over medium-high heat. Sear the steak for about 2-3 minutes on each side until browned but not cooked through. Remove from heat and let rest for a few minutes.

            Bake Everything Together: Slice the steak into strips and place it on the veggie side of the baking sheet. Drizzle the reserved marinade over the steak and veggies. Bake in the preheated oven for 15-20 minutes, or until the steak reaches your desired doneness and the veggies are tender.

              Serve: Remove from the oven and let it rest for a couple of minutes. Garnish with fresh parsley before serving.
