4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella, sliced

1 cup fresh basil leaves

½ cup balsamic vinegar

2 tablespoons honey

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, thyme, basil mix)

Optional: additional balsamic glaze for drizzling

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and sear for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Balsamic Glaze: In the same skillet, add the balsamic vinegar, honey, garlic powder, and dried Italian herbs. Stir well, scraping any browned bits from the bottom of the skillet. Bring the mixture to a simmer and let it cook for 3-5 minutes, or until it slightly thickens.

        Combine Ingredients: Return the chicken breasts to the skillet and spoon the balsamic glaze over each piece. Add the halved cherry tomatoes around the chicken, allowing them to soak in the glaze.

          Add Mozzarella and Basil: Top each chicken breast with a slice of fresh mozzarella. Cover the skillet and let the cheese melt for about 2-3 minutes. Just before serving, sprinkle fresh basil leaves over the top.

            Serve: Transfer the chicken to a serving dish and garnish with any remaining balsamic glaze. Serve hot, with extra fresh basil and cherry tomatoes on the side, if desired.
