1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

1 teaspoon ground cinnamon

For the cheesecake filling:

24 oz (3 packages) cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

½ cup heavy cream

For the baklava topping:

1 cup walnuts, chopped

1 cup pistachios, chopped

1 teaspoon ground cinnamon

½ cup honey

½ cup water

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar and vanilla extract, beating until well combined. Add eggs one at a time, mixing on low speed just until incorporated. Fold in sour cream and heavy cream until fully blended.

      Pour the filling: Pour the cheesecake filling over the prepared crust in the springform pan, smoothing the top with a spatula.

        Bake the cheesecake: Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center slightly jiggles when you tap the pan. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour. Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours or overnight.
