Baked Salmon with Mustard Dill Sauce

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

Salt and pepper, to taste

1 lemon, sliced

Fresh dill sprigs, for garnish

For the Mustard Dill Sauce:

¼ cup Dijon mustard

¼ cup plain Greek yogurt

1 tablespoon honey

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

Salt and pepper, to taste

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Salmon: Pat the salmon fillets dry with paper towels. Drizzle olive oil over the fillets and sprinkle with salt and pepper. Place each fillet, skin-side down, on a lined baking sheet.

      Add Lemon: Lay a few lemon slices on top of each salmon fillet for added flavor and moisture.

        Make the Sauce: In a small bowl, whisk together the Dijon mustard, Greek yogurt, honey, finely chopped dill, lemon juice, salt, and pepper until you have a smooth sauce.

          Bake the Salmon: Place the baking sheet in the preheated oven and bake the salmon for about 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

            Serve: Once baked, remove the salmon from the oven. Drizzle the mustard dill sauce over the top of each fillet. Garnish with extra fresh dill and seasonal vegetables if desired.
