Baked Parmesan Zucchini

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably whole wheat for a healthy twist)

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash and dry the zucchinis. Slice them into rounds or spears, about ½ inch thick.

      Make the Coating: In a large bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, dried Italian herbs, salt, and black pepper until well combined.

        Coat the Zucchini: Drizzle olive oil over the zucchini slices, tossing to ensure they’re evenly coated. Then, dip each zucchini piece into the breadcrumb mixture, pressing gently to make sure the coating sticks well.

          Arrange on Baking Sheet: Place the coated zucchini in a single layer on the prepared baking sheet.

            Bake: Bake in the preheated oven for about 20-25 minutes, or until the zucchini is tender and the coating is golden brown and crispy.
