Baked Oatmeal Cups with Berries

Ingredients
  

2 cups rolled oats

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 cups milk of your choice (dairy, almond, oat, etc.)

1/4 cup maple syrup (or honey)

2 large eggs

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen; blueberries, raspberries, strawberries)

1/4 cup chopped nuts or seeds (optional)

Optional toppings: yogurt, nut butter, or additional fresh berries

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick spray or line with muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well to ensure all dry ingredients are evenly distributed.

      Whisk Wet Ingredients: In a separate bowl, whisk together the milk, maple syrup (or honey), eggs, and vanilla extract until fully combined.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients and stir until everything is well mixed. It’s okay if the mixture seems a bit watery; the oats will absorb the liquid while baking.

          Fold in Berries: Gently fold in the mixed berries and nuts or seeds if using, ensuring they are evenly distributed throughout the mixture.

            Fill the Muffin Tin: Evenly distribute the oatmeal mixture into the prepared muffin tin cups, filling each about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the oatmeal cups are set and lightly golden on top.

                Cool: Remove the muffin tin from the oven and allow the oatmeal cups to cool in the tin for 5-10 minutes. Then, carefully remove them and place on a wire rack to cool completely.

                  Serve & Enjoy: You can enjoy the oatmeal cups warm, topped with yogurt or nut butter, or store them in an airtight container for up to a week in the fridge. They also freeze well for up to three months!
