4 halibut fillets (6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 garlic cloves, minced

1 tsp lemon zest

1/2 tsp salt

1/4 tsp black pepper

1/2 cup Dijon mustard

2 tbsp olive oil

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Crust: In a large bowl, combine panko breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, lemon zest, salt, and black pepper. Mix well until all ingredients are evenly distributed.

      Coat the Halibut: Rinse the halibut fillets under cold water and pat them dry with paper towels. Brush each fillet generously with Dijon mustard on both sides. This will help the panko mixture adhere better and add a delicious tangy flavor.
