2 lbs baby Yukon Gold potatoes

1/2 cup unsalted butter, melted

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: grated Parmesan cheese (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Rinse the baby Yukon Gold potatoes thoroughly and pat them dry. You can leave the skins on for added texture and flavor.

      Make the Garlic Butter: In a mixing bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, smoked paprika, salt, and pepper. Mix well until the ingredients are fully incorporated.

        Coat the Potatoes: Place the potatoes in a large mixing bowl or on a baking sheet. Pour the garlic butter mixture over the potatoes, tossing them gently to evenly coat each potato.

          Arrange for Baking: Spread the coated potatoes in a single layer on a rimmed baking sheet. Make sure there is a little space between each potato for even cooking.

            Bake the Potatoes: Bake in the preheated oven for 30 to 35 minutes, or until the potatoes are golden brown and fork-tender, flipping them halfway through to ensure even browning.

              Garnish and Serve: Once baked, remove the potatoes from the oven and allow them to cool for a couple of minutes. Garnish with freshly chopped parsley and if desired, sprinkle grated Parmesan cheese on top before serving.
