Ingredients

8 slices of day-old brioche or challah bread, cut into 1-inch cubes

4 large eggs

1 cup whole milk

½ cup heavy cream

⅓ cup granulated sugar

2 tsp vanilla extract

1 tsp ground cinnamon

¼ tsp nutmeg (optional)

½ cup maple syrup (plus extra for serving)

½ cup chopped pecans or walnuts (optional)

Fresh berries (strawberries, blueberries, or raspberries for garnish)

Powdered sugar for dusting

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 12-cup muffin tin with non-stick spray or butter.

Prepare the Bread: Place the cubed bread into a large mixing bowl. If your bread isn’t a day old, you can lightly toast the cubes in the oven for about 5-7 minutes until they are slightly crispy.

Mix the Custard: In a separate bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and nutmeg. Ensure everything is well combined.

Combine: Pour the egg mixture over the bread cubes, gently tossing until all pieces are soaked. Allow it to sit for about 10 minutes so the bread absorbs the liquid.

Fill Muffin Tins: Distribute the soaked bread evenly into the prepared muffin tins, packing them down lightly. Drizzle maple syrup over each filled muffin cup and sprinkle chopped nuts on top if desired.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and puffed. The edges should be crispy, while the centers remain soft.

Cool and Serve: Remove from the oven and let the baked muffins cool in the tin for about 5 minutes. Then gently remove them with a fork or silicone spatula.

Garnish: Serve warm, drizzled with extra maple syrup. Top with fresh berries and a dusting of powdered sugar for an extra special touch.

Enjoy your delicious Breakfast Bliss Baked French Toast Muffins warm, perfect for a cozy breakfast or brunch gathering!
