Baked Feta Potatoes

4 large russet potatoes, scrubbed and pierced with a fork

200g feta cheese, crumbled

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional, for heat)

4 tablespoons olive oil

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Place the pierced potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

      Mix the Topping: While the potatoes are baking, in a mixing bowl, combine the crumbled feta cheese, cherry tomatoes, minced garlic, dried oregano, dried thyme, red pepper flakes (if using), olive oil, and a pinch of salt and pepper. Stir well to combine.

        Prepare for Baking: Once the potatoes are done, remove them from the oven and let them cool slightly before handling. Carefully cut each potato lengthwise, creating a pocket for the filling. Gently pinch the ends of the potato to slightly open it up.
