Ingredients

8 oz (225 g) penne pasta

8 oz (225 g) feta cheese block

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated lemon zest (optional) for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Dish: In a 9x13 inch (or similar size) baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper. Mix well.

Add the Feta: Place the block of feta cheese in the center of the dish. Drizzle a little extra olive oil over the feta.

Bake: Transfer the dish to the preheated oven and bake for 25-30 minutes until the tomatoes are blistered and the feta is golden and creamy.

Cook the Pasta: While the feta and tomatoes are baking, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Combine Everything: Once the feta and tomatoes are done baking, carefully take the dish out of the oven. Use a fork to mash the feta and toss it with the tomatoes and garlic until well combined.

Mix with Pasta: Add the cooked penne pasta to the baking dish. Toss everything together until the pasta is coated with the creamy sauce. Adjust seasoning with more salt, pepper, or red pepper flakes if needed.

Serve: Plate the pasta and top it with fresh basil leaves and a sprinkle of grated lemon zest if desired. Enjoy!
