4 large chicken thighs (bone-in, skin-on preferred)

1 cup buttermilk

2 cups panko breadcrumbs

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp cayenne pepper (adjust for spice preference)

1 tsp Italian seasoning

Salt and black pepper to taste

½ cup grated Parmesan cheese

Cooking spray or olive oil for drizzling

Marinate the Chicken: In a large bowl, soak the chicken thighs in buttermilk, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight for maximum tenderness.

    Prepare the Coating: Preheat your oven to 425°F (220°C). In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, cayenne pepper, Italian seasoning, salt, and black pepper. In a separate bowl, combine the panko breadcrumbs with Parmesan cheese.

      Coat the Chicken: Remove the chicken from the buttermilk, letting the excess drip off. Dredge each piece first in the seasoned flour, shaking off the excess, then dip it back into the buttermilk, and finally coat it with the panko mixture, pressing to adhere well.
