1 cup cottage cheese

4 large eggs

1/2 cup spinach, chopped (fresh or frozen)

1/4 cup cherry tomatoes, halved

1/4 cup bell pepper, diced (any color)

1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs for garnish (optional, such as parsley or chives)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Dish: Lightly grease a baking dish (about 8x8 inches) with olive oil.
