1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup (100g) breadcrumbs (preferably panko for extra crunch)

1/2 cup (50g) grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (or your choice of seasoning)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 cup (240ml) buttermilk

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.

    Prepare the Chicken: In a bowl, mix the buttermilk and cut chicken pieces. Allow the chicken to marinate for at least 15 minutes. This step will tenderize the chicken and help the coating stick better.

      Prepare the Breading Station: In a shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.

        Coat the Chicken: In a separate bowl, beat the eggs. Remove the marinated chicken from the buttermilk, shaking off the excess. Dip each piece into the egg mixture, then into the breadcrumb mixture, pressing the breadcrumbs onto the chicken to ensure an even coating.

          Arrange on Baking Sheet: Place the coated chicken nuggets on the prepared baking sheet in a single layer, making sure they are not touching to allow for even cooking.

            Spray and Bake: Lightly spray the tops of the chicken nuggets with cooking spray or drizzle with a little olive oil to promote browning. Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). For extra crunch, you can turn on the broiler for the last 2-3 minutes – just keep an eye on them to prevent burning.
