3 cups fresh mushrooms, sliced (e.g., cremini or button)

1 cup cooked rice (white or brown)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent (about 3-4 minutes).

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes, until they are golden brown and their moisture has mostly evaporated. Season with thyme, oregano, salt, and pepper.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed mushrooms, heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese. Mix thoroughly.

          Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

            Add Toppings: Sprinkle the remaining mozzarella and Parmesan cheeses over the top. If you like a crunchy topping, mix breadcrumbs with a tablespoon of olive oil and sprinkle it over the cheese layer.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                Serve: Allow the casserole to cool for a few minutes before serving. Garnish with fresh parsley for added flavor and presentation.
