Baked Apple Pie Breakfast Bites

Baked Apple Pie Breakfast Bites are a delightful, portable treat that combines the comforting flavors of classic apple pie with the convenience of a quick breakfast option. Made with tart Granny Smith apples, warm spices like cinnamon, and a flaky pastry crust, these bites are both satisfying and easy to prepare. Perfect for busy mornings or leisurely brunches, they offer a delicious way to start your day while evoking the nostalgic taste of homemade desserts.

Ingredients
  

2 large apples, peeled, cored, and diced (I recommend Granny Smith for tartness)

1 teaspoon ground cinnamon

1 tablespoon brown sugar (or maple syrup for a healthier twist)

1 tablespoon lemon juice

1 package of refrigerated puff pastry (or phyllo dough)

1/2 cup granola (your favorite mix)

1/4 cup chopped walnuts or pecans (optional)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

A pinch of salt

Powdered sugar (for dusting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Apples: In a mixing bowl, combine the diced apples, cinnamon, brown sugar, and lemon juice. Toss until the apples are well coated.

      Roll the Puff Pastry: Unroll the puff pastry onto a lightly floured surface. Cut the pastry into squares (about 4x4 inches), depending on the size you prefer for your breakfast bites.

        Fill the Pastry: Place a tablespoon of the apple mixture in the center of each square. Add a teaspoon of granola and a sprinkle of walnuts or pecans (if using) on top of the apple mixture.

          Seal the Bites: Fold the corners of the pastry squares towards the center, creating little pockets. Pinch the edges to seal them tightly. You can also use a fork to crimp the edges for a pretty finish.

            Prepare Egg Wash: In a small bowl, whisk together the egg and milk. Brush the tops of each pastry bite with the egg wash for a golden finish.

              Bake: Place the filled and sealed pastry bites on the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and flaky.

                Cool and Serve: Once baked, remove them from the oven and let them cool for a few minutes. Dust with powdered sugar if desired and serve warm.
