2 large apples (preferably Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

3/4 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1/4 cup milk (or non-dairy alternative)

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup powdered sugar (for glaze)

1 tablespoon milk (for glaze)

Optional: additional cinnamon for dusting

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat for easy clean-up.

    Prepare the Apples: In a medium bowl, mix the diced apples with 1 tablespoon of granulated sugar and a sprinkle of cinnamon. Let them sit for about 10 minutes while you prepare the batter.

      Make the Batter: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, granulated sugar, and brown sugar until well combined.

        Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, applesauce, and vanilla extract until smooth. Gradually add this mixture to the dry ingredients, stirring gently until just combined.

          Fold in Apples: Gently fold the seasoned diced apples into the batter, being careful not to overmix.

            Shape the Fritters: Using a large spoon or cookie scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart. You can smooth the tops slightly with the back of the scoop if desired.

              Bake: Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted in the center comes out clean.

                Prepare the Glaze: While the fritters are baking, make the glaze by mixing the powdered sugar with 1 tablespoon of milk in a small bowl until smooth. If you prefer a thinner glaze, add a bit more milk until you reach your desired consistency.

                  Glaze the Fritters: Once the fritters are done baking and have cooled for about 5 minutes, drizzle the glaze over the tops using a spoon or spatula. For an extra touch, you can dust with additional cinnamon.
