Ingredients

2 pounds baby potatoes (red or Yukon gold)

6 slices of crispy bacon, chopped

1 cup sour cream

1/2 cup mayonnaise

1 packet Ranch dressing mix

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup shredded sharp cheddar cheese

1/2 cup green onions, sliced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

Salt and pepper to taste

Instructions

Cook the Potatoes: In a large pot, bring salted water to a boil. Add the baby potatoes and cook for 15-20 minutes, or until fork-tender. Drain and let them cool before cutting into halves or quarters.

Prepare the Bacon: While the potatoes are cooking, in a skillet over medium heat, cook the bacon slices until crispy. Transfer to a paper towel-lined plate to drain excess grease, then chop into small pieces.

Make the Dressing: In a bowl, combine the sour cream, mayonnaise, ranch dressing mix, Dijon mustard, garlic powder, and onion powder. Whisk until smooth and well combined.

Combine Ingredients: In a large mixing bowl, add the cooled potatoes, chopped bacon, shredded cheddar cheese, and sliced green onions. Pour the dressing mixture over everything and gently fold together until well coated.

Add Fresh Herbs: Stir in the fresh dill and season with salt and pepper to taste. You can start with a pinch of each and adjust according to your preference.

Chill and Serve: Cover the potato salad with plastic wrap and refrigerate for at least 1 hour (or longer) to allow the flavors to meld. Before serving, give it a gentle stir and taste for seasoning adjustments.

Garnish: Once ready to serve, garnish with extra green onions or a sprinkle of dill for an attractive presentation.
